Good nutrition also involves avoiding certain kinds of foods. Sodium is used heavily in processed foods and is dangerous for people with high blood pressure. The survey studies states that adults to consume less than 300 milligrams (mg) per day of cholesterol (found in meat and full-fat dairy products among others). Fried food, solid fats, and trans fats found in margarine and processed foods can be harmful to heart health. Refined grains (white flour, white rice) and refined sugar (table sugar, high fructose corn syrup) are also bad for long-term health, especially in people with diabetes. Alcohol can be dangerous to health in amounts more than one serving per day for a woman and two per day for a man.

Stuffed Capsicum Recipe

INGREDIENTS

  • ▢400 grams potatoes boiled & mashed, around 2-3 medium potatoes
  • ▢6-7 small bell peppers (capsicum/shimla mirch) each weighing around 75-80 grams
  • ▢3 tablespoons oil divided, I used avocado oil
  • ▢1 teaspoon cumin seeds
  • ▢3/4 teaspoon fennel seeds
  • ▢1 teaspoon whole coriander seeds crushed
  • ▢1/4 teaspoon hing asafoetida
  • ▢1 medium red onion chopped
  • ▢1 green chili chopped
  • ▢1 teaspoon coriander powder
  • ▢1/2 teaspoon garam masala
  • ▢1/2 teaspoon amchur dried mango powder
  • ▢1/4 teaspoon red chili powder or to taste
  • ▢3/4 teaspoon salt or to taste
  • ▢1-2 tablespoons chopped cilantro

INSTRUCTIONS

  1. Before you start, wash the bell peppers and then dry them. Cut the top and discard. Then remove the seeds and stems from inside to make it hollow for the filling. You may also need to cut down the bottom of some of the peppers slightly if they are wobbly. This is to make sure that they are able to stand upright in the pan while cooking.
  2. For the filling, start by boiling the potatoes until soft and done. You can do this using a regular pressure cooker, 8-9 whistles on high heat or use an Instant Pot, 10-12 minutes on high pressure with natural pressure release.
  3. Let the potatoes cool down, then peel and mash with a potato masher. Set aside.
  4. Heat 1 tablespoon oil in a pan on medium heat. Once the oil is hot, add the cumin seeds, fennel seeds and crushed coriander seeds. Saute for 30 seconds until the seeds sizzle.
  5. Then add the hing, followed by chopped onion and green chili and stir. Saute the onions for 3 minutes until soften
  6. Add in the mashed potatoes and mix. Then add the spices- coriander powder, garam masala, amchur, red chili powder. Also add the salt. Mix everything together. 
  7. Cook for 1 minute and then add in chopped cilantro. Mix and remove pan from heat.
  8. Now, take each of the prepared bell peppers and fill them all the way to the top with the prepared potato mixture. Press tightly so that potatoes don’t fall out while cooking the peppers.
  9. Heat the remaining 2 tablespoons of oil in the pan on medium heat. Once oil is hot, lower the heat to low. Add the prepared bell peppers into the pan carefully. Close the lid and cook for 3 minutes.
  10. After 3 minutes, change sides of the bell pepper using a tong and cook again for 3 minutes. After 3 minutes again change the side. Basically you cover and cook for around 20 to 25 minutes on low heat, changing sides of the pepper every 3 minutes or so making sure it gets cooked from each side. Make sure to also turn them upside down so that the potato filling gets nicely roasted from top. Remember to keep the heat to low at all times. 
  11. The skin of the peppers will soften and wrinkle up once cooked.
  12. Once done, remove each pepper from the pan carefully using a tong. Serve bharwa shimla mirch with roti or paratha and enjoy!

Watermelon Mint Lemonade

Ingredients

  •  ½ cup granulated sugar
  • ½ cup water
  • 10 cups seedless watermelon, cubed in 1-inch pieces
  • 1 cup fresh-squeezed lemon juice
  • ½ cup loosely packed mint leaves
  • Lemon slices, for serving
  • Fresh mint sprigs, for serving

Directions

1. First, you’ll need to make the simple syrup. In a saucepan over medium heat bring the water and        sugar to a boil and set aside to cool.

2. In a high-speed blender add the watermelon pieces and mint leaves and blitz until pureed.

3. Strain it through a fine-mesh sieve and transfer the pure liquid in a big pitcher.

4. Pour in the lemon juice and simple syrup.

5. Let it chill in the fridge for 20 minutes and serve with ice, lemon wedges, and sprigs of mint.

The hotel sector is dominated by Men than women with an average 55.5% of the workforce, but is managed by men, as women are mainly found in positions that are ascribed to their gender, such as directors of sales, housekeeping, and marketing.. There are wide opportunity of employment source as The Indian tourism and hospitality industry have emerged as one of the key drivers of growth among the services sector in India. In covid era In 2020, the Indian tourism sector accounted for 39 million jobs, which was 8% of the total employment in the country.

GOVERNMENT INITIATIVES

The Indian Government has realised the country’s potential in the tourism industry and has taken several steps to make India a global tourism hub.

Some of the major initiatives planned by the Government of India to boost the tourism and hospitality sector of India are as follows:

  • From November 15, 2021, India allowed fully vaccinated foreign tourists to visit India, which in turn will help revive the Indian travel and hospitality sector.
  • In the Union Budget 2022-23, an additional US$ 316.3 million was earmarked for Ministry of Tourism.
  • In November 2021, the Ministry of Tourism signed a Memorandum of Understanding (MoU) with Indian Railway Catering and Tourism Corporation to strengthen hospitality and tourism industry. The ministry has also signed an MoU with Easy My Trip, Cleartrip, Yatra.com, Make My Trip and Goibibo.
  • In November 2021, the Indian government planned a conference to boost film tourism in the country with an aim to establish domestic spots as preferred filming destinations. This move is expected to create jobs and boost tourism in the country.
  • In October 2021, Prime Minister, Mr. Narendra Modi launched the Kushinagar International Airport in Uttar Pradesh to boost tourism.
  • The COVID-19 pandemic has greatly disrupted the Tourism industry. In September 2021, the Ministry of Tourism announced plans to allow international tourists to enter India and formal protocols are under discussion. According to the previous announcements, the first five lakh foreign tourists will be issued visas free of cost.
  • In September 2021, the government launched NIDHI 2.0 (National Integrated Database of Hospitality Industry) scheme which will maintain a database of hospitality sector components such as accommodation units, travel agents, tour operators, & others. NIDHI 2.0 will facilitate the digitalisation of the tourism sector by encouraging all hotels to register themselves on the platform.
  • In July 2021, the ministry drafted a proposal titled ‘National Strategy and Roadmap for Medical and Wellness Tourism’ and has requested recommendations and feedback from several Central Ministries, all state and UT governments and administrations as well as industry partners to make the document more comprehensive.
  • In May 2021, the Union Minister of State for Tourism & Culture Mr. Prahlad Singh Patel participated in the G20 tourism ministers’ meeting to collaborate with member countries in protecting tourism businesses, jobs and taking initiatives to frame policy guidelines to support the sustainable and resilient recovery of travel and tourism.
  • Government is planning to boost the tourism in India by leveraging on the lighthouses in the country. 71 lighthouses have been identified for development as tourist spots.
  • The Ministry of Road Transport and Highways has introduced a new scheme called ‘All India Tourist Vehicles Authorisation and Permit Rules, 2021’, in which a tourist vehicle operator can register online for All India Tourist Authorisation/Permit. This permit will be issued within 30 days of submitting the application.
  • In February 2021, the Ministry of Tourism under the Government of India’s Regional Office (East) in Kolkata collaborated with Eastern Himalayas Travel & Tour Operator Association (resource partner) and the IIAS School of Management as (knowledge partner) to organise an ‘Incredible India Mega Homestay Development & Training’ workshop. 725 homestay owners from Darjeeling, Kalimpong and the foothills of Dooars were trained in marketing, sales and behavioural skills
  • On January 25, 2021, Union Tourism and Culture Minister Mr. Prahlad Singh Patel announced plan to develop an international-level infrastructure in Kargil (Ladakh) to promote adventure tourism and winter sports.
  • The Indian Railway Catering and Tourism Corporation (IRCTC) runs a series of Bharat Darshan tourist trains aimed at taking people to various pilgrimages across the country.
  • On November 4, 2020, the Union Minister of State (IC) for Tourism & Culture Mr. Prahlad Singh Patel inaugurated the “Tourist Facilitation Centre” facility constructed under the project “Development of Guruvayur, Kerala” (under the PRASHAD Scheme of the Ministry of Tourism).
  • Under Budget 2020-21, the Government of India has allotted Rs. 207.55 crore (US$ 29.70 million) for development of tourist circuits under PRASHAD scheme.
  • The Ministry of Tourism’s ‘DekhoApnaDesh’ webinar series titled ‘12 Months of Adventure Travel’ on November 28, 2020, is likely to promote India as an adventure tourism destination.
  • On January 26, 2021, Maharashtra Chief Minister Mr. Uddhav Thackeray inaugurated Balasaheb Thackeray Gorewada International Zoological Park in Nagpur. It is India’s largest zoological park spread over 564 hectares and expected to attract ~2.5 million tourists a year.
  • The Ministry of Tourism developed an initiative called SAATHI (System for Assessment, Awareness & Training for Hospitality Industry) by partnering with the Quality Council of India (QCI) in October 2020. The initiative will effectively implement guidelines/SOPs issued with reference to COVID-19 for safe operations of hotels, restaurants, B&Bs and other units.
  • Statue of Sardar Vallabhbhai Patel, also known as ‘Statue of Unity’, was inaugurated in October 2018. It is the highest standing statue in the world at a height of 182 metre. It is expected to boost the tourism sector in the country and put it on the world tourism map.
  • Under Budget 2020-21, the Government of India has allotted Rs. 1,200 crore (US$ 171.70 million) for development of tourist circuits under Swadesh Darshan for eight Northeast states.

Crispy Paneer

Paneer Crispy Recipe:

Ingredients:

Paneer-1 packet sliced lengthwise

Red chilli powder-1 tsp

Salt to taste

Cornflour-1 tblspn

All purpose flour(Maida)-2 tblspn

Pepper-1/2 tsp

Breadcrumbs-1 cup

Tomato Ketchup for serving

Oil for shallow frying

Method:

In a small bowl add paneer pieces,red chilli powder,salt and mix well.Let it sit for 10 min.

In a separate bowl mix cornflour,maida,salt,pepper with some water to make a paste.

Heat oil for shallow frying…Dip the paneer piece in batter and then in breadcrumbs and place it in a plate.Make every paneer pieces like this.

When the oil is ready fry the paneer pieces in hot oil till golden.Remove and drain it in paper towel.

Serve this with Tomato ketchup

Fish Biryani Recipe

Ingredients

  • 1 kg seer fish
  • 1 kg onions
  • 100 gm green chillies
  • 70 gm garlic
  • 70 gm ginger
  • Juice of 2 lemons
  • 1 cup coriander leaves
  • 1 cup yoghurt
  • Salt to taste
  • 1 kg rice (kaima rice is best)
  • 3 Tbsp ghee
  • 1 cup cooking oil
  • ½ kg tomatoes
  • 1 tsp turmeric powder
  • 2 Tbsp cashew nuts broken
  • 2 Tbsp raisins
  • 4 glasses water (in proportion to the number of cups of rice)
  • 3 pods cardamom
  • 3 cinnamon sticks
  • A pinch of garam masala

How to Make Fish Biryani

  1. Take 250 gm onions and cut them into thin slices. Heat oil and 1/2 cup ghee in a pan, and fry the onion till golden brown. Fry cashew nuts and raisins and keep aside.
  2. Apply turmeric powder with enough salt and little water on the fish.
  3. Heat 2 tablespoons oil in a frying pan. Lightly fry the fish till half done and keep aside.
  4. In a heavy-bottomed vessel, heat 3 tablespoons of oil. Grind the remaining onion in a blender with 1/2 cup water. Add this onion mixture to the hot oil.
  5. Meanwhile crush ginger, garlic and chillies. Add this paste to the onion mixture. Stir well for 3-4 minutes.
  6. Add tomatoes, yoghurt and salt. Cook for some time till the water evaporates. Add the fried fish pieces, coriander leaves and the juice from the lemons. Keep aside.
  7. For the Rice:
  8. Heat ghee in a non-stick vessel.  Add 1/2 chopped onion, cardamoms and cinnamon. Immediately add the washed rice (drain without any water).
  9. Add boiled water (1:2 ratio) and salt and cook on high flame till the water is absorbed by the rice.
  10. Keep the rice covered for 10 minutes. Sprinkle garam masala powder over the rice.
  11. Now take a heavy bottomed vessel and add the cooked rice in one layer at the bottom. Add a few spoons of the fish masala. Toss some fried onion, nuts and raisins and a little garam masala powder and cover with a rice layer.
  12. Layer it up, finishing with the garnishes on top.
  13. Take a napkin (radius of the vessel), dampen it with water and a little rose water, and cover the vessel.
  14. Put the biryani on dum for 1 hour with light heat for the flavours to develop. Serve hot.

Quick Chicken Curry

Ingredients

  • 1 kg chicken
  • 3 large onions, paste
  • 2 large tomatoes, pureed
  • 1 Tbsp garlic paste
  • 1 Tbsp ginger paste
  • 2 tsp coriander powder
  • 2 tsp cumin powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp garam masala powder
  • 2 Tbsp oil
  • Salt to taste
  • Chopped coriander for garnish

How to Make Quick Chicken Curry

  1. Heat oil in a pan and sauté the onion paste, garlic & ginger paste till golden brown.
  2. Add tomato puree. When the tomato puree dries up, add coriander powder, cumin powder, garam masala, red chilli powder, turmeric powder and salt. Let the spices cook.
  3. Add chicken pieces into the masala. Stir well and cook till they are golden brown.
  4. Add 1/2 cup of water and stir. Cover with a lid and let it simmer till the chicken is cooked.
  5. Garnish with chopped coriander and serve.
